Ingredients
- 1/2 ounce pear & ginger cocktail syrup
- 1/2 ounce St. Germain
- 1/2 ounce freshly squeezed lemon juice
- 3 ounces of prosecco

- 1 large pear
- 1/2 cup fresh ginger
- 1/2 cup of water
- 2 tbsp. of sugar
Direction (Pear and ginger cocktail syrup)
- Slice a pear into very small pieces, discarding the core. Peel and grate 1/2 cup of fresh ginger using the citrus zester.
- Combine ginger and pear in a saucepan with ½ cup of water. Allow to simmer on low heat for 20 minutes.
- After about 20 minutes, use a potato masher to mash the pear as much as you can (optional).
- Add 2 tbsp. of sugar. Stir and allow to simmer for 5 more minutes. Strain mix using the fine mesh strainer and by applying pressure using the back of a spoon.
- Place pear-ginger mixture in a container and refrigerate for about 15 minutes so it will be cool enough to handle.
Direction (Pear Collins)
- Add ice to the cocktail shaker and pour ½ ounce of pear & ginger syrup, 1/2 ounce of St Germain, ½ ounce of freshly squeezed lemon juice and 3 ounces of Prosecco.
- Gently stir and pour into a frosted glass.
