Ingredients

  • 2 ounces gin
  • 1/2 ounce freshly squeezed lemon juice
  • 1/2 ounce raspberry simple syrup
  • 1 egg white

Direction (RASBERRY SIMPLE SYRUP)

  1. Add 1 cup sugar and ½ cup water to a pot. Stir over medium heat until the sugar has dissolved.
  2. Reduce heat to low, add 1/2 cup fresh raspberries, and macerate into a pulp.
  3. Fine strain to remove the berry’s tiny seeds.
  4. Optionally, add ½ oz vodka as a preservative. Refrigerate in a jar until ready for use.

Direction (CLOVER CLUB)

  1. Add the gin, freshly squeezed lemon juice, raspberry syrup and egg white into the shaker.
  2. Dry shake for 10 seconds.
  3. Remove the lid, add ice and shake again for an additional 10 - 15 seconds.
  4. Double-strain (using both the Hawthorne and fine-mesh strainer) the shaker contents into a chilled cocktail glass.
