Ingredients
- 2 ounces gin
- 1/2 ounce freshly squeezed lemon juice
- 1/2 ounce raspberry simple syrup
- 1 egg white
Direction (RASBERRY SIMPLE SYRUP)
- Add 1 cup sugar and ½ cup water to a pot. Stir over medium heat until the sugar has dissolved.
- Reduce heat to low, add 1/2 cup fresh raspberries, and macerate into a pulp.
- Fine strain to remove the berry’s tiny seeds.
- Optionally, add ½ oz vodka as a preservative. Refrigerate in a jar until ready for use.
Direction (CLOVER CLUB)
- Add the gin, freshly squeezed lemon juice, raspberry syrup and egg white into the shaker.
- Dry shake for 10 seconds.
- Remove the lid, add ice and shake again for an additional 10 - 15 seconds.
- Double-strain (using both the Hawthorne and fine-mesh strainer) the shaker contents into a chilled cocktail glass.
