Ingredients
- 2 ounces gin
- 2 ounces pear puree (Recipe to right)
- Club soda or sparkling water
- Fresh thyme
- 1 medium pear, peeled, cored, and diced
- 1 tbsp freshly squeezed lemon juice
- 1 tbsp honey
- 2 tbsp water
Direction (PEAR PUREE)
- Heat all ingredients in a small saucepan over low heat, stirring occasionally. Simmer until the pears are softened, about 10 minutes.
- Add more water if needed to prevent the pears from sticking.
- Remove from heat, strain into a jar using the fine mesh strainer, and let cool.
Direction (PEAR COLLINS)
- Combine the gin and pear puree in the cocktail shaker and add ice.
- Shake vigorously for 10-15 seconds.
- Strain into a highball glass filled with ice. Top off with soda or sparkling water.
Garnish
- 1-2 fresh thyme sprigs.
