Ingredients
- 3 ounces gin (Hendrick’s preferred for its great floral taste)
- 3/4ounce persimmon simple syrup (recipe below)
- 1 egg white
- 1/2 teaspoon of freshly squeezed lemon juice
- Ginger beer, to top
- Orange bitters, to finish
- Persimmon and star anise, to finish
Simple Syrup Ingredients and Direction
- 1 cup sugar
- 1 cup water
- 1 persimmon, slice
- Boil all ingredients for 4-5 minutes in small pot over medium heat
- Remove from heat and allow to cool. Strain into small bottle using the fine mesh strainer
Direction
- Combine gin, persimmon simple syrup, egg white, and freshly squeezed lemon juice in a cocktail shaker.
- Dry shake for 10 seconds. Remove the lid, add ice and shake again for an additional 10 - 15 seconds.
- Double-strain (using both the Hawthorne and fine-mesh strainer) the shaker contents into the cocktail glass. Finish with a splash of ginger beer and a few dashes of bitters.
